Sweet Chili Camp Fire Jacket Potato (Serves 6)



Ingredients:


  • Six Medium sized potatoes

  • 15g of butter

  • 400g of ground beef (mince)

  • One medium size onion

  • 410 g baked beans into tomato sauce

  • 410g of Miami Boerie Relish

  • 30ml Rooibaard Original Peri peri sauce

  • Rooibaard Laeveld grinder spice to taste

  • Rajah flavorful and mild cury powder

  • Garlic to taste

  • 10ml Worcester Sauce

  • Salt and Pepper to taste

  • Parsley or Spring onion to garnish

  • Grated Gouda or cheddar cheese

  • Sweet Chilli Cream Cheese


Instructions for Potatoes:


  • Wrap potatoes in aluminum foil and cook in the fire or dutch oven

  • Cook until soft in the center


Instructions for Chili:


  • Dice onions into small cubes and fry in a little oil

  • Add ground beef, mince, and fry until dry and brown

  • Season with curry powder

  • Season with Rooibaard Laeveld grinder spice to taste

  • Include Worcester Sauce

  • Include Rooibaard Original Peri peri sauce

  • Include Miami Boerie Relish

  • Include garlic

  • For extra heat, add Kwaadbaard sauce from Rooibaard sauces

  • Add baked beans and stir well to prevent sticking

  • Simmer until fully cooked


Assembly Instructions:


  • Open the potato and mash it partially with a fork.

  • Garnish with butter

  • Add one table spoon of sweet chili cream cheese per potato

  • Add the beef chilli pre cooked.

  • Top with grated cheese

  • Return to fire or in dutch cast iron stove until cheese is melted

  • Finish with parsley or green onion


Camping advice: Prepare your chili ahead of time, cook it, and then freeze it. When you arrive at your campsite, you can easily thaw and reheat it in a cast iron pan over the fire.
