Easy Camp Fire Carrot Cake


Ingredients Cake:


  • 2 cups of all purpose flour

  • 1 & 1/2 cups of granulated sugar

  • 1/2 cup of vegetable oil

  • Juice of two naartjies

  • 4 Large eggs

  • 2 cups of grated carots

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • 1/2 tsp of nutmeg

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/4 cup of pecan or wallnuts


Ingredients Cream Frosting:


  • 250g cream cheese

  • 1/2 cup unsalted butter

  • 3 cups of icing sugar

  • 2 tsp vanilla extract


Method for cake:


  1. Mix together all the dry ingredients.

  2. Stir in the eggs, oil, and vanilla extract.

  3. Prepare a well-greased fire pan or Dutch oven.

  4. Line it with baking paper.

  5. Pour the mixture into the pan and bake for 30 minutes.

  6. Place some coals on top of the lid for even cooking.

  7. Check if the cake is done by inserting a toothpick.


Method for frosting:


  1. Combine all ingredients together and mix well.


Finishing:

  1. Once the cake is baked golden brown, let it set for a while before you slice it in half.

  2. Ice the first layer of the cake.

  3. Add the second layer and ice on top.

  4. Finish with some zest of naartje and pecan nuts.
