
Ingredients
6 cups hash-browns, thawed
2 cups bacon diced
6 whole eggs
1/4 cup milk
2 cups cheddar cheese, shredded
1 cup green onion or spring onion, diced
salt & pepper, to taste
1/2 cup tomato, diced
Instructions
Prepare a foil BBQ-safe pan by spraying it with cooking spray, then place the thawed hash-browns and ham in it.
In a large bowl, combine eggs with milk and whisk together. Add cheese, green onions, and tomatoes, then pour the mixture over the hash-browns and ham.
Season with salt and pepper to your liking.
Cover the pan with foil and cook on the BBQ at 375 degrees for 30 minutes using indirect heat.
Remove the foil and continue cooking for an additional 15-35 minutes until the edges are crispy and the hash-browns are coated with scrambled eggs.
